We published a post of our beans lunch in our social media channels yesterday and received so many requests about this recipe. Here it is, guys, the Brazilian Black Beans basic recipe! It is the base of the everyday Brazilian diet, high protein, high fibre and very low fat.
If you are not sure which beans to buy, look for DRY black beans or dry kidney beans at any large supermarket (Sainsburys, Tesco, Waitrose, they all stock it), not the canned ones, not the refried ones: we are making good and healthy home made food from scratch here :)
The recipe below yields 4 servings.
120 g of beans
2 garlic cloves
METHOD OF PREPARATION
Leave all the beans to soak in water overnight.
On the next day, drain the water and rinse it again.
Place the beans in a sauce pan with 7x the amount of cold water.
Boil for 1 hour. Add salt, and keep it simmering.
In a frying pan apart, place oil, onion, and garlic. Always put the onion first and then the garlic to not burn the garlic. Saute.
Take two tbsp of the beans that are in your main pan (without water) and add it to the onions and garlic pain, pressuring the beans, to smash it and mix it well to the other ingredients (this is key to a creamy sauce).
Add the sauted onion garlic "mashed" beans, to the main pan (this will season all other beans).
Simmer for another 20 to 30 minutes, or as soon as the water becomes a bit creamy.
Serve with chilly oil and sauted kale.
Keep it in the fridge, it will be even better in the next day, creamier!
