These are so pretty! I serve them as a starter or a side dish in dinner parties. Pretty and healthy!
1 grated sweet potato
2 tbsp grated parmesan cheese
1 tbsp chopped chives
1 cup chopped spinach
1 clove garlic, minced
2 tbsp light ricotta
1 tsp of coffee
Salt to taste
Spray of olive oil
Method of preparation
Put the grated potato in a bowl.
Add the grated cheese and chives.
Season with salt and herbs.
Sprinkle olive oil and mix well.
With this dough, fill a cupcake tin, using a spoon to open a cavity and fill the sides to make the nests shape.
Cover with foil and bake for 10 minutes.
Meanwhile, sauté the garlic and spinach in a pan.
Add the ricotta and season with salt and pepper.
Stir and turn off the heat.
Take off the foil that covers the nests and let it get gonden (another 10 minutes). Remove from the oven and fill each nest with the spinach stuffing.
