AVOCADO CHOCOLATE MOUSSE
This healthy avocado chocolate mousse comes together in minutes. Raw, vegan, gluten-free, and paleo.
2 ripe avocados
1/3 cup Agave syrup
1/3 cup raw cacao powder
2 tablespoons unsweetened almond milk
1/2 teaspoon vanilla extract
1/8 teaspoon salt
Halve the avocados and scoop the flesh into a food processor or blender.
Add the almond milk, cacao powder, agave syrup and vanilla extract.
Mix for a minute or until smooth.
Taste and adjust with extra agave nectar if needed.
Spoon the avocado chocolate mousse into pretty glasses or ramekins
Refrigerate for at least 30 minutes before serving.
Serve plain or topped with cacao nibs, fresh raspberries, and/or whipped coconut cream.

We nailed this recipe to make pizza crust with cauliflower, reducing the carbs and calories but still giving you the feeling of a naughty pizza.
1 garlic clove
1 tbsp of grated parmesan cheese
½ cup low fat cream cheese
3 tbsp of low fat tomato sauce (we used Dolmio light)
Salt, oregano and basil to taste
Method of preparation
Preheat the oven to 180ºC.
In a processor, mash the cauliflower.
Transfer this dough to a dish cloth to drain excess water.
Transfer the dough to a bowl.
Add garlic, salt, oregano, parmesan cheese and egg and mix well.
Open the batter in a bake tray.
Bake for 20 minutes.
After this period, remove from the oven.
Spread the tomato sauce, mozzarella, tomato and basil.
Return to the oven to gratin the cheese.
Remove and serve immediately.

4 slices of turkey breast
1 whole egg
1 egg white
8 cherry tomatoes
½ grated carrot
1 tablespoon light cream chese
Salt and pepper to taste
Method of preparation
Preheat the oven to 180º
In a bowl, beat the egg and whisk lightly.
Add the cream cheese and beat it a little more.
Season with salt and pepper and put aside.
Place the turkey breasts in a muffin tin making the base of the baskets
Inside each basket put grated carrots and chopped tomatoes.
Pour the egg mix.
Sprinkle with chives and bake until golden.
