We're going savoury today ladies: get ready fo some SPINACH muffins!! 70 calories each.
As we see in the cartoon of the Popeye character, spinach is pure power.
The vegetable contributes to the prevention and control of diabetes due to its fibers, which helps burning sugar. And due to the presence of chromium, it potentiates the effects of insulin, improving the uptake of glucose by the cells. This mineral is also useful for anyone planning to lose weight or need to lower cholesterol. That is, guaranteeing your consumption with some frequency only brings benefits.
Ingredients: 340 g of spinach ½ cup ricotta ½ cup of light grated parmesan cheese 2 eggs 1 crushed garlic clove ¼ teaspoon salt ¼ teaspoon freshly ground black pepper
Preparation: Preheat the oven to 200ºC. Spin the spinach in a food processor. Transfer the result to a bowl. Add the ricotta, the grated cheese, the eggs and the garlic. Season with salt and pepper and mix . Grease an eight spot muffin tin and distribute the dough. Bake the muffins for about 20 minutes or until golden brown. Remove from the oven and let stand for five minutes. Release the edges with a knife, remove fom thē in and serve it hot.
